TexasTerry's Tex/Mex Pie
Serving for 6 and Prep & Cooking Time about 30 minutes
2lbs. of Ground Lean Beef(7%fat) or Chicken (meats crumbled into small bite size pieces)
1-tblsp. Garlic Powder
2-tblsp. All-Purpose Flour
1-tsp. Table Salt
1- 15oz. can of Pinto Beans (optional) rinsed and drained
3-Tbl. Chili Powder or Taco Seasoning Mix
4 1/2-cups of Fritos Corn Chips or Small Taco Chips
1 1/2 cups of Shredded Cheddar Cheese
2-cups of finely Shredded Lettuce
3/4-cup chopped tomato
3/4-cup chopped onion
1/2-cup Salsa
2-cups Water
1. In a 6qt. pan on medium heat, cook beef until well browned. Stir in garlic, onion, and salt. Push beef aside in pan, til pan liquid runs to the opposite side then stir into liquid the flour until well blended. Mix pan contents together.
2. Add water, beans and chili powder or Taco Seasoning Mix until mixture boils and thickens. Continue cooking for about 8 minutes.
3. In a large bowl spread out Frito or Taco Chips and add beef mixture then sprinkle Chopped Onions on top with cheese, lettuce, tomato and salsa.
